3 lbs small red potatoes
1/4 cup olive oil
1 1/2 tsp kosher salt
1 tsp ground pepper
2 Tbs minced garlic (about 6 cloves)
2 Tbs minced fresh parsley

Directions:
Directions:
Preheat over to 400 degrees. Cut potatoes into quarter & place in a bowl with olive oil, salt, pepper & garlic. Toss until potatoes are well coasted.
Place potatoes on baking sheet - spread in one layer.
Roast for 45 minutes to 1 hours or until browned & crisp.
Flip twice while baking. Remove potatoes & toss with parsley & season to taste.
