5 lbs. potatoes, peeled and cut into chunks
1 tbsp. minced garlic or powdered equivalent
4 cubes chicken bouillion
8 oz. sour cream
8 oz. cream cheese
1/2 c. butter or margarine
Salt & Pepper to taste

In a large pot of lightly salted boiling water, cook the potatoes, garlic and bouillon until potatoes are tender but firm, about 20 minutes. Drain, reserving water. In a bowl, mash potatoes with sour cream and cream cheese, adding reserved water as needed to attain desired consistency (See Note) Transfer the potato mixture to a slow cooker, cover and cook on Low for 2-3 hours. Just before serving, stir in butter and season with salt and pepper to taste.

Note: When you mash potatoes, you might want to make the consistency stiffer than usual because when you add the butter, the consistency becomes softer. Save about a cup of the water from the potatoes after mashing in case you need to add some before serving. Also, placing a cloth over the top of the slow cooker and then placing the top over the cloth will absorb some of the steam from the potatoes. If you are able, stir the potatoes every 30 minutes or so to keep them from becoming brown on bottom, althought this is not much of a problem.. Recipe is easy to half.
