5 lb. Yukon Gold Potatoes
3 celery stalks
1 large Vidalia Onions
l small jar pimentos.
Peel and dice potatoes into 1/4 blocks
Boil UN salted water until potatoes are knife-tender
Always place hot drained potatoes over diced celery and diced onions and pimentos.
Mix, and add the dressing until the potatoes are covered.
Dressing for salad.







I can evaporate milk
3 Tabs Mustard
1/2 c sugar
salt pepper to taste
1/2 c apple cider vinegar.
and two eggs.

1 can of evaporated milk
2 T flour
2 T dry mustard
2 eggs
1/2 c APPLE CIDER VINEGAR
1 Tablespoon celery seed

Always temper eggs into milk this will keep it from turning into scrambled eggs. Add sugar and 2 Tablespoons of flour into the dressing as it cooks over low heat. Add mustard and celery seeds. Cook until sauce begins too thicken. and let cool down.
Mix over potatoes
This same dressing ca be used on Cole slaw.

This salad was always made for different parties and dinners. The meal was never finished until my mother's potato salad was served. This is a picnic must in West Virginia
It can be dressed up with hard-boiled eggs.
