2 tbsp vegetable or olive oil
16 oz mushrooms slice
1/4 cup finely chopped shallot or onion
1 medium clove garlic minced
1 10oz package of frozen chopped spinach cooked and well drained
1 tbsp flour
4 eggs slightly beaten
1 15 oz container of ricotta cheese
1/4 cup parmesan cheese
3/4 cup diced mozarella cheese
1/4 tsp nutmeg
1/4 tsp pepper
Pastry for 2 crust 10 inch pie
1 egg separated
1 jar 6 oz roasted red peppr drained and cut into strips
1 tbsp sour cream or heavy cream

Directions:
In skillet over medium heat in hot oil cook mushrooms and onions with garlic until tender stirring occasionally. Add spinach and cook 2 minutes or until liquid is evaporated stirring constantly. Stir in flour set aside.
Preheat oven to 375. In large bowl beat together 4 eggs,cheeses, nutmeg and pepper. Stir one cup of cheese mixture into mushroom mixture. Prepare pie pastry and line 10 in. deep dish pie plate with pastry, trim even with rim, saving scraps. Prick with a fork. Brush with beaten egg white. Bake 10 min.
In prebaked pie crust layer 2 cups of mushroom mixture, 1 cup of cheese mixture, remaining mushroom mixture, red peppers and remaining cheese mixture. Cover pie with top crust. Flute edges and scraps can be used to decorate top. Combine egg yolk and sour cream brush on pastry. Place pie on cookie sheet and bake 1 hour or until golden brown. Let cool for 20 min. Cut into wedges
