One tbsp. sugar
1 package of yeast
1/2 cup warm water
3 cups flour
1 1/2 tsp. salt
1/3 cup milk
1 cup water
1 tsp. olive oil

Directions:
Directions:
Combine sugar and yeast and add to the 1/2 cup of warm water and let sit for 10 to 15 minutes until it is foamy.

Combine flour and salt and make a well in the center. Pour the yeast mixture into the well and combine with the water and milk and mix until the sides of the bowl are clean. Knead into a smooth dough, smooth with olive oil, cover with a towel and leave in a warm place to rise and double in size (2 to 4 hours).
Punch the dough down and shape and smooth into orange size balls. Cover with a clean cloth and let rise at least 30 minutes.
Roll the balls into 1/4 inch thick circles and let rise again for another 30 minutes.
Heat oven to 475º. Bake the loaves directly on the rack of the oven for 2 to 5 minutes until slightly browned.

Diran gave me his mother's (Jamile Ibrahim Saifi) recipe for Arabic bread. At her home in Bichmezzine Lebanon, she had an outdoor stone oven where she baked her bread.
