6 slices BACON (halved lengthwise & cut into 1/4" pcs)
2 lbs POTATOES (red bliss or yukon gold)
SALT
BAY LEAF
1T BACON FAT
3 T unsalted BUTTER (melted)
1/2 c CREAM CHEESE
BLACK PEPPER
2 T fresh PARSLEY (chopped)

Directions:
Fry Bacon until crisp. Drain and save 1 T Fat
Cover Potatoes w/1" Water in a Large Saucepan, Add Salt & Bay Leaf. Boil High heat, reduce to M/Low until Potatoes are tender 35-45 min. Reserve 1/2c cooking Water and drain Potatoes. Return to pot & discard Bay Leaf, allow to stand in Pot uncovered until Potatoes are dry.

Whisk Melted Butter, Bacon Fat & softened Cheese in a Med Bowl until Smooth.
Add 1/4c reserved Water 1/2 tsp Pepper, Parsley & 1/4 tsp of Salt.
Use Spatula to Smash Potatoes enough to break skins.

Fold in Butter Cream mixture until all absorbed & chunks of Potato remain. Adding more of cooking Water as needed 1 T at a time.

Sprinkle w/Bacon
