1 chicken (at least 1 kg)
salt and pepper
50 g butter
1 small white or bok choy cabbage, diced
2 large onions, diced
2 large carrots, diced
2 red bell peppers, diced
500 g potatoes, diced
½ celery stock, diced
¼ L chicken stock
½ L red wine
2 cloves garlic, minced
Piece of mace aril

Directions:
Directions:
Thoroughly clean the chicken inside and out, then pat dry and quarter it. Rub the pieces with salt and pepper, heat the butter and quickly brown the four pieces on all sides in a large skillet or pot. Add the stock, wine, vegetables, garlic and aril to the chicken; salt and pepper to taste. Cover the stew and cook for 60-75 minutes on low heat, stirring occasionally.
Serve with warm crisp French bread and butter.
