1 baked 9" pie shell
Filling:
1 1/2 c. sugar
6 T. cornstarch
1/4 tsp salt
3 egg yolks (keep whites)
3 c. buttermilk
1 c. raisins
3 T. lemon juice
1 T. butter or margarine
1 tsp vanilla extract

Meringue:
3 egg whites
1/4 tsp cream of tarter
6 T. sugar

Directions:
Directions:
Bake pie shell per packaged directions. Filling: In saucepan combine sugar, cornstarch and salt. In small bowl, beat egg yolks and buttermilk to blend and stir into sugar mixture until smooth; add raisins and lemon juice; cook and stir over medium heat until mixture comes to a gentle boil. Cook and stir 2 minutes longer; remove from heat, stir in butter and vanilla. Pour into pie shell. Meringue: Beat egg whites and cream of tarter and cream of tarter in bowl until soft peaks form; gradually add sugar, beating until stiff peaks form. Spread over hot filling and seal edges, Bake at 350º for 12-15 minutes or until lightly brown. Store in refrigerator.
