1 cup stewing beef in small pieces
1 tbsp vegetable oil
½ tsp ginger
1 onion, diced
1 beef bouillon cube
½ cup water
½ cup red lentils
1 leek, sliced
1 red pepper, diced
1 can diced tomatoes
1 tbsp tomato paste
Parsley
Coriander

Directions:
Directions:
Cook the beef and onion in oil until brown. Season with a little salt and ginger. Place the bouillon cube in a soup pot with the water and let it simmer for 45 minutes. Then add in the lentils and cook for another 15 minutes. Add the veggies, tomato paste and cooked beef into the soup. Let simmer on medium heat until vegetables are cooked. Add parsley and coriander to taste. Add more water if it is too thick.
