25 lbs ¾” cubed beef, fat trimmed off
3 lb onions, chopped
½ box cornstarch

Directions:
Directions:
Put ½ cubed beef in iron kettle on low heat. Stir often to keep from sticking. When it starts to make it own juice put in other ½ cubed beef.
Turn heat on high and stir occasionally. When juice from beef covers the meat put in the chopped onion, salt & pepper to taste, and stir occasionally. When all the juice cooks away, pour enough water over the meat to cover the meat about an inch. Turn down heat and simmer for about 1 hour or until meat is tender.

In a small pan mix cornstarch and enough water to dissolve the cornstarch. Pour the mixture over the meat and stir it until it is mixed and then turn off heat.
