1½ cups of vegetable oil
2 cups white sugar
4 eggs
1 tsp vanilla
3 cups grated carrots
2½ cups flour
2 tsp baking soda
2 tsp baking powder
2 tsp cinnamon
1 tsp salt
1 cup raisins
1 can crushed pineapple (drained)
1 cup nuts (optional)

Cream Cheese Frosting:
4 oz (½ brick) of cream cheese
½ cup margarine or butter
1 tsp vanilla
2½ cups icing sugar

Directions:
Directions:
Preheat oven to 325ºF. Beat oil, eggs, sugar, and vanilla together for 5 minutes. Add shredded carrots. Mix dry ingredients together. Add to carrot mixture slowly. Add raisins, pineapple and nuts. Pour into a greased 11X18 pan or divide into two smaller pans. Bake (larger pan size) for 50 or 60 minutes. Cool and frost.

Frosting:
Mix ingredients together and spread over cake.
