1 12 0z can pineapple juice
3/4 c. sugar
7 med cooking apples, pared, cored, wedged (7 c.)
3 T. cornstarch
1 T. butter
1/2 tsp vanilla
1/4 tsp salt
1 9 inch pie shell, baked

Directions:
Directions:
In large sauce pan combine 1 1/4 cup of the pineapple juice and sugar. Bring to a boil. Add apple wedges. Simmer covered till tinder, but not soft - 3-4 minutes. Lift apples from syrup; set aside to drain. Combine cornstarch and remaining pineapple juice. Add to syrup in sauce pan. Cook and stir till thickened and bubbly. Cook 1 minute more. Remove from heat and add butter vanilla and salt. Cool 10 minutes without stirring. Pour about half of the syrup into baked pie shell, spreading to cover the bottom. Arrange cooked apples on top. Spoon remaining syrup over the apples. Cool thoroughly or chill. Garnish center of pie with whipped cream or sour cream. Sprinkle with chopped macadamia nuts if desired.
