vegetable oil for oiling
6 oz of chocolate chip cookies
4 Tbsp. unsalted butter

Filling:
8 ozof semisweet chocolate, broken into pieces
8 oz of milk chocolate, broken into pieces
generous 1/4 cup superfine sugar
1-1/2 cups cream cheese
scant 2 cups heavy cream, lightly whipped
3 Tbsp. Irish Cream liqueur

Directions:

Line the bottom of an 8-inch round springform cake pan with parchment paper and brush the sides with oil. Place the chocolate chip cookies in a plastic bag and crush with a rolling pin. Melt the butter in a bowl and add stir in the crushed cookies. Press into the bottom of the prepared cake pan and chill in the refrigerator for 1 hour. Melt the semisweet and milk chocolate and blend together. Let cool. Beat together the sugar and cream cheese until smooth, then fold in the cream. Fold the melted chocolate into the cream cheese mixture, then stir in the liqueur. Spoon into the cake pan and smooth the surface. Let chill in the refrigerator for 2 hours, or until quite firm.
