2 sheets ready rolled puff pastry
1 small onion, finely sliced
1½ cups mushrooms, sliced
4 tbsp olive oil
4 slices cooked bacon
5 eggs
Pepper to taste
1 tbsp chopped chives
2 tomatoes, sliced

Directions:
Directions:
Preheat the oven to 375°C.
Line the base and sides of a shallow, ovenproof dish with pastry, cutting pastry if necessary. Brush edges with a little milk.
Heat butter or olive oil in a frying pan. Cook the onion for 4-5 minutes until soft. Add mushrooms and cook until just beginning to soften. Cut bacon into pieces. Place half the bacon over pastry. Break eggs over bacon. Season the eggs with black pepper and chopped chives. Put tomato slices over eggs. Cover with remaining bacon and mushroom mixture and then cover with remaining pastry, pressing the edges together firmly to seal well.
Bake for 25 minutes or until golden brown.
