Ingredients:  
★ 2 medium zucchini, sliced into ½ rounds
★ 1 tbsp Olive oil
★ ½ cup chopped yellow onion
★ 2 cloves of garlic, minced
★ Zest of ½ lemon or lemon peel spice
★ 6 oz spaghetti
★ ¼ cup pitted Kalamata olives
★ ¼ cup Parmesan cheese

Directions:
Directions:
1. Preheat oven to 450 degrees. Place sliced zucchini on cookie sheet. Brush with olive oil, salt and pepper. Roast for 10-15 minutes. Remove from oven and set aside.
2. Cook spaghetti for 9 minutes.
3. In a large sauce pan sauté chopped onion in olive oil over medium-low heat for 5 minutes or until translucent.
4. Add garlic, lemon peel and cooked zucchini.
5. Add zucchini mixture to pasta and add olives.
6. Simmer to warm up mixture.

You can sprinkle the Parmesan cheese or I just put the cheese on the table and let everyone sprinkle their own on the pasta. Enjoy!
