★ 1 quart milk, heated slightly simmer slightly
★ 1 cup rice, washed
★ 2 eggs slightly beaten ½ cup sugar
★ 1 tsp. vanilla

Directions:
Directions:
1. In double boiler heat the milk.
2. Stir in the rice.
3. When milk and rice reach boiling point, turn down the heat and cook for 15 minutes, stirring occasionally.
4. Test rice for doneness. Add some of the rice mixture to the combined eggs and sugar.
5. Return mixture to sauce pan. Cook slowly until it thickens a bit.
6. Pour into a bowl, stir mixture until it cooks.
7. Add vanilla. Stir well.
