★ 6 eggs
★ 2/3 cup milk
★ pinch salt
★ pinch black pepper
★ 1 ½ cup shredded cheddar cheese
★ ½ box frozen spinach, thawed and drained
★ 1 T. Parmesan cheese
★ Bacon bits or sm. pieces of cooked bacon for garnish

Directions:

1. Beat eggs with wire whisk in bowl until smooth.
2. Beat in milk.
3. Stir in seasonings, cheddar cheese and spinach.
4. Grease 9-inch frying pan or omelette pan. (I use cooking spray.
5. Pour egg mixture into pan.
6. Sprinkle top with Parmesan cheese, bacon bits or small pieces of cooked bacon.
7. Bake in preheated oven at degrees for 20 minutes or until set and a golden color.
