8 celery stalks, in 1/2" slices
2 tbsp oil
2 lbs stewing beef, cubed
2 onions, chopped
3 garlic cloves, crushed
2 bay leaves
1 tbsp thyme
salt and pepper to taste
1 can (15 oz) diced tomatoes
1 carrot, diced
1 potato, diced
1 large handful brown rice
8 cups water

Directions:
Directions:
Add the beef and oil to a skillet and brown on all sides. Place the cooked beef in a crock pot. Add the garlic, onions and celery to the same skillet. Cook for 8 to 10 minutes, stirring occasionally, or until the celery is limp. Add the vegetable mixture to the crock pot with the beef. Add a little water to the hot skillet and remove any bits on the bottom of the pan; add this water to the crock pot. Add the bay leaves, thyme, salt and pepper to the crock pot. Stir. Add the remaining ingredients and stir to combine.
Cover and cook on low for 6 to 8 hours. Thirty minutes before serving, turn the crock pot to high and add the rice.
