15 - 3 inch tart shells unbaked
1 1/3 cup fresh raspberries
2 eggs
2 tsp grated lemon rind
3 egg yolks
3/4 cup granulated sugar
1/2 cup lemon juice
Minted whipped cream
3/4 cup whipping cream
1 tbsp granulated sugar
2 tbsp chopped fresh mint

Directions:
Directions:
Place 3 raspberries in each shell. Whisk together egg yolks, eggs, sugar, lemon rind and juice in a bowl. Spoon off any foam. Pour filling into the tart shells to fill just below top inside edge.
Preheat oven to 400. Bake tarts for about 20 minutes or until filling is firm and pastry edge is a light golden brown. Let cool on rack for 5 minutes. They can be kept in the fridge for up to 2 days.
When ready to serve whip cream and sugar to stiff peaks. Stir in the mint. Remove the tarts from tins and top each tart with whipped cream and then garnish with remaining raspberries.
