Ingredients: 1/4 lb unsalted butter 1/2 cup granulated sugar 1 egg yolk 1/4 tsp salt 1 tbsp water 2 tsp fresh lemon juice Grated rind of one lemon 1 tsp vanilla extract 1 cup all purpose flour 1/2 superfine sugar

Directions:Preheat oven to 350 Beat together the butter and sugar until light and creamy. Beat in the egg yolk, salt,water, lemon juice, grated lemon rind and vanilla extract. Beat in the flour. Form dough into a ball and wrap in waxed paper and chill for two hours. Roll the dough thinly on a well floured surface. There is a proportion of butter to flour so if you have difficulty rolling the dough it can be kneaded to warm it up. Cut the dough into 1 1/4 inch circles and bake on unbuttered cookie sheets for 8 -10 minutes until the edges are slightly browned. Remove from baking sheets and cool on wire racks. They will crispen as they cool |

Notes: I made these one weekend when Mom and Dad came to stay we lived on Rendale then. Dad said he didn't want any and sat and ate a couple of dozen while we sat there talking.
