Ingredients:
2 eggs, beaten
1 cup milk
3 tbsp butter, melted
½ tsp salt
¾ cup flour

Directions:
Directions:
Mix ingredients together, adding the flour last. (I mix these ingredients in my blender because it comes out without any lumps and is easy to pour into the pan.)
Heat the frying pan and keep the stove heat around medium. Put a bit of butter in the frying pan, spreading the butter over the whole bottom to prevent sticking. Pour or spoon in some batter and swirl the pan to distribute the batter thinly and evenly over the bottom of the pan. The amount of batter depends on the size of the pan. Too much batter and the pannekoek will be too thick, too little and you will not cover the whole bottom.
Put the pan back on the stove and cook until the top side of the pannekoek looks dry and is not shiny anymore. Flip the pannekoek to cook the other side. The pannekoek should be nicely light brown. The second side of the pannekoek will finish in just a minute or two. Stack the pannekoek on a plate and cover to keep warm while you proceed to make more, until the batter is gone.
Serve with whatever toppings you enjoy: butter, syrup, powdered sugar, fresh fruit, whipped cream, peanut butter and bananas, hazelnut spread, chocolate sprinkles, apple butter, or jam. Fill the center of the pannekoek with the toppings, roll it up and enjoy!
