½ cup margarine, softened
1 cup sugar
1 egg
2 cups flour
1 tsp baking soda
1 tsp cinnamon
½ tsp salt
1 cup finely shredded zucchini
1 cup raisins or chocolate chips
1 cup chopped walnuts or pecans

Directions:
Directions:
Cream butter/margarine and sugar until light and fluffy. Beat in egg. Then add flour, baking soda, cinnamon, salt, alternately with zucchini, beating well after each addition. Stir in raisins and walnuts. Cover and refrigerate for 2 hours.
Drop by heaping teaspoonfuls 2” apart onto lightly greased baking sheets.
Bake at 375º F for 12-15 minutes, or until lightly browned. Remove and cool onto wire racks.
