crust- 2 cups of crushed graham crackers, 1 cup finely diced walnuts, 1/2 cup confectioner sugar, 1 stick of unsalted butter, melted

cake- 4 8 ounce pkgs of cream cheese, 1/4 lb butter, 16 oz sour cream, 2 tbsp corn starch, 1 1/2 cups sugar, 1 tsp lemon juice, 5 eggs, 1/2 tsp vanilla

All cheese , butter and sour cream must be at room temperature.

Combine the graham cracker crumbs, walnuts, and confectioners sugar in medium bowl. Slowly pour in melted bitter and keep stirring until thoroughly coated and even texture. Transfer to a 9-10 inch springform pan. Using the back of a large spoon, press all over to ensure that the crust is an even thickness all over. Refrigerate.

Blend the cream cheese, butter, sour cream, corn starch, vanilla, and lemon juice.. Beat in 1 egg at a time until mixture is very smooth. Pour into a well buttered spring form pan. Place in water bath (larger pan with water in it,( about 1 inch.) and put in preheated oven for 1 hour until top is nice and brown. Check with toothpick for doneness. If clean, turn oven off , close oven door and cool for 1 hour in oven.
