4 Tbsp Salad Oil, divided
1 Large Onion, Chopped
1 Large Celery Stalk, Diced
2 Tbsp Chili Powder
1 28 oz. Can Tomatoes
1-1/2 tsp Salt, divided
1-1/4 tsp Dried Oregano, divided
1/8 tsp Crushed Red Pepper Flakes
2 16-oz cans Black Beans, Drained
1/4 cup Chopped Parsley
2 Tbsp Red Wine Vinegar
1 lb Large Shrimp, shelled, deveined

In a 12-inch skillet, over high heat, add 2 Tbs salad oil; cook onion and celery until tender and lightly browned, stirring frequently, about 5 minutes. Add chili powder and cook 1 minute. Add tomatoes with their liquid, 1 tsp. salt. 1 tsp. oregano leaves and 1/8 tsp. crushed red pepper flakes; heat to boiling, stirring to break up tomatoes.v Reduce heat to low and simmer 10 minutes, uncovered, stirring occasionally. Stir in black beans, chopped parsley and vinegar; heat through. Meanwhile, in a 10-inch skillet over high heat, add 2 Tbs. salad oil and stir-fry shrimp, adding 1/2 tsp. salt, 1/4 tsp. oregano and 1/4 tsp. crushed red pepper flakes, until shrimp turn pink and are tender, being careful not to overcook. To serve, spoon black-bean mixture onto 6 warm dinner plates; top with shrimp mixture; or combine sauce and shrimp and serve over cooked rice. Makes 6 servings.
