Directions: |
Directions:Cut the tops off of the tomatoes and slice. Place slices in the buttermilk and soak for about 5 minutes. Mix the flour, cornmeal, salt and pepper in a shallow dish. Shake the excess buttermilk off of a tomato slice and dredge both sides in the flour / cornmeal mixture and place immediately into the hot oil in the skillet. Cook for about 3-5 minutes and gently turn over and brown the other side. Remove from oil and immediately sprinkle with 1 tbsp. of the Parmesan cheese. Only cook one layer of tomato slices at a time and keep them from touching while cooking. |

Notes: I have experimented with fried green tomatoes for years and this is the best recipe I have tried. The buttermilk adds just the right amount of tartness and they are crispy when done.
