1 tablespoon butter
3 tablespoons flour
3 cups milk
3 eggs
1 cup sugar
1 teaspoon vanilla

Directions:
Directions:
Boil as white sauce. When cool add beaten egg yolks and beaten whites. Add 1/2 cup sugar and vanilla.
Bake at 325⁰F in caramel lined pan for 1 hour. Set pudding in pan of water. Serve with whipped cream.

For the caramel:
Use 1/2 cup sugar caramelized in pan, not pyrex dish.

It seems everyone else calls it flan, but Grandma Thelander's, prepared in little tin cups was best.[John]

Betty, John and I, all remember that our Mother always served Smet Pudding for a "company" dessert. That's pronounced Smate, a Swedish word that should have a little circle over the e, I think! I only made it once or twice, years ago, but John thought this should be included.
