1 (6-oz.) pkg. chicken stuffing mix
3/4 c. butter, melted
3 c. zucchini, diced
2 c. cooked chicken, cubed
1 (10.5-oz.) can cream of chicken soup
1 med. carrot, shredded
1/2 c. onion, chopped (optional)
1/2 c. sour cream

Directions:
Directions:
In a large bowl, combine stuffing mix and butter. Set aside 1/2 cup for topping. Add the zucchini, chicken, soup, carrot, onion, and sour cream to the remaining stuffing mixture. Put in a greased 2 quart baking dish or 9x13-inch baking pan. Sprinkle with reserved stuffing mixture. Bake, uncovered, at 350º for 40-45 minutes or until golden brown and bubbly.
