3 (5-oz.) cans solid white-albacore tuna packed in water
1/4 c. minced onion
2 T. olive oil
2 tsp. lemon juice
Salt and black pepper
1/2 tsp. sugar
1/2 c. plus 2 T. mayonnaise
1 celery rib, chopped fine

Marinate tuna: Place tuna in fine-mesh strainer and press dry with paper towels. Transfer to medium bowl and mash with fork until finely flaked. Microwave onion and oil in small bowl until onion begins to soften, about 2 minutes. Cool slightly, about 5 minutes. Combine onion mixture, lemon juice, 1/2 tsp. salt, 1/2 tsp. pepper, and sugar with tuna and let sit 10 minutes. Stir mayonnaise and celery into tuna mixture. Season with salt and pepper. Serve. Salad can be refrigerated in airtight container for one day.
Tuna Salad with Sweet Pickle and Egg: Prepare as above, adding 1/4 c. sweet pickle relish to tuna with cooked onion mixture. Add two chopped hard-cooked eggs with mayonnaise and celery mixture.
Tuna Salad with Lemon and Dill: Prepare basic recipe increasing lemon juice to 1 tablespoon and adding 1/2 teaspoon grated lemon zest and 1 tablespoon finely chopped fresh dill with cooked onion mixture.
Tuna Salad with roasted red peppers and capers: To basic recipe, add 1/4 c. finely chopped, jarred roasted red peppers, patted dry, and 2 tablespoons drained and minced capers with cooked onion mixture.
