1 1/2 c. penne pasta, uncooked
1 lb. boneless, skinless chicken breasts, cubed or 2 (12.5 oz) cans chunk chicken breast
1/2 c.onion, chopped (optional)
2 tsp. olive oil
1 (10.5-oz) can cream of mushroom soup
1 c. heavy whipping cream
2 c.part-skim mozzarella cheese, shredded
1/8 tsp. black pepper
broccoli, spinach or peas, fresh or frozen (optional)

Directions:
Directions:
Cook pasta according to package directions. In skillet, cook and stir chicken and onion in oil for 5 minutes or until chicken juices run clear. Stir in soup and cream. Bring to a boil over medium heat. Reduce heat; simmer uncovered for 2 minutes; stir in cheese and pepper. Add spinach, broccoli or peas with the cheese. Drain pasta, add to chicken mixture and toss to coat.
