3 cups flour
3 cups peeled, cored, and finely chopped apples
2 cups sugar
1 1/2 cups vegetable oil
1 cup sweetened flaked coconut
1 cup chopped pecans
1/4 cup orange juice
3 large eggs
1 Tbsp. ground cinnamon
1 Tbsp. vanilla extract
1 tsp. baking soda
1/4 tsp. salt
Sauce:
1/2 cup butter
1 cup sugar
1/2 cup whole buttermilk
1/2 tsp. baking soda
Garnish: apple slices

Preheat oven to 325º. Spray a 12- to 15-cup fluted pan with nonstick baking spray with flour.
In a large bowl, combine flour, apples, sugar, oil, coconut, pecans, juice, eggs, cinnamon, vanilla, 1 tsp. baking soda, and salt, mixing well. Pour batter into prepared pan, and bake for 1 hour and 20 minutes to 1 hour and 30 minutes, or until a wooden pick inserted in center comes out clean.
Remove cake from oven; let cool in pan for 10 minutes. Remove cake from pan, and place on a wire rack.
To prepare sauce: In a large saucepan, melt butter over medium heat. Stir in sugar, buttermilk, and 1/2 tsp. baking soda; bring to a boil, stirring constantly. Boil for 1 minute. Pour sauce over warm cake. Garnish with apples, if desired.
