8 lbs peeled potatoes
2 sticks margarine
2 tsp. salt
2 Tbs. sugar
3 c flour
3/4 tsp. baking powder
6 Tbs. Cream

Directions:
Directions:
Cook peeled potatoes and mash or rice them. Add margarine, sugar and salt to the hot, mashed potatoes. Work to a smooth pulp, then measure approx 3 1/2 cups each into three different bowls. Cool.

Add 1 cup flour, 1/4 tsp. baking powder and 2 Tbs. cream to each bowl. Knead well together, pat into even portions and roll out dough until very thin.

Bake on a lefsa grill (think tortilla size) until bubbly and light brown on each sides. Lay between waxed paper or towels as you bake them.

Could not find notes on a temperature to cook the lefsa on the grill. Lefsa should be about the size and shape of a flour tortilla. Can be served with butter, honey, cinnamon/sugar, syrup or even just eaten plain.
