Pie Crust:
1 c. flour
1/3 c. vegetable shortening
1/2 tsp. salt
2 1/2 T. cold water

Filling:
4-6 c. fresh berries or chopped peaches
1 c. sugar
1 tsp. grated lemon peel
(optional) pinch of nutmeg or sprig of bruised mint
3 T. corn starch
1/2 c. water

Crust:
Sift flour and salt together. Cut in shortening until mixture resembles corn meal. Add cold water a little at a time. Combine into a homogeneous mixture that forms a ball. Roll out onto a floured surface to about 1/8 in. thick. Lay and shape into an 8 in pie plate. prick the bottom with a fork. Bake at 400º for about 10 minutes.
Filling:
Fill cooled pie crust with fruit. Save 1 c. fruit to mash with a potato masher in a saucepan. Add 1 c. sugar and 1/2 c. water to mashed berries. Mix in lemon peel and any herb or spice desired. Mix in cornstarch and stir over medium heat until thickened. Pour hot mixture over fruit in pie shell. Refrigerate.
