4-5 large carrots
2 tablespoons grated (fresh) ginger
1 teaspoon cumin powder
1/2 teaspoon cinnamon powder
4 garlic cloves, peeled and chopped
I Bit of Olive or coconut oil

Directions:
Directions:
1. Scrub the carrots (use organic!) and slice into rounds, remembering that the thinner they are, the faster they cook. 2. Heat a splash of oil in the bottom of a cast iron or saucepan (or a wok) and when it gets hot, add the ginger and garlic,
stirring until the garlic is turning slightly golden, then add the carrots and cumin and cinnamon, possibly adding a splash
of water to make sure there’s enough liquid so the carrots are evenly coated with the spices and not sticking to the pan. 3. Stir as you cook over medium heat until they’re as tender as you like them.
