4-5 Chicken Breasts
1 Medium Onion, Chopped 4c Fat Free Chicken Broth
4c Water
1/2c Reduced Fat Olive Oil Mayonnaise
1 Tb. Yellow Mustard
Garlic, to taste
Peperoncinis, chopped
Salt & Black Pepper, to taste

Directions:
Directions:
Combine broth, water, onion and garlic in a large saucepan. Bring to a boil. Add chicken and boil until cooked though. Remove chicken and shred with fork. Place chicken in bowl and refrigerate until cool. Remove some onions from the stock and add to the chicken. Stir in mayo, mustard, peperoncinis, garlic, salt and pepper. Serve on a bed of lettuce and enjoy!
