1 large can pineapple tidbits (No Sugar Added, in it’s own juice)
1 cup uncooked brown rice
1 red bell pepper, chopped (optional)
Sea salt and pepper to taste

Directions:
Directions:
Strain pineapple juice into a large measuring cup. Add water to the juice to equal 2/14 cups of liquid. In a large pot lightly sauté bell pepper for 2-3 minutes. Add rice , pineapple tidbits, and then pineapple juice/water mixture. Season with salt and pepper to taste. Bring to a boil over high heat. Cover, reduce heat and simmer for 30 minutes or until rice is tender and liquid is absorbed.
