1 aguacate maduro cortado en cubitos
4 zanahorias medianas peladas y ralladas (con los hoyos grandes del rallador de queso)
1 limón o naranja 
(el jugo de)
2 cda vinagre balsámico
sal del mar
pimienta recién molida
1 paquete de tofu firme o pollo cocido, cortado en cubitos
Semillas tostadas de girasol, sésamo, linaza, o una mezcla

1 small ripe avocado diced

1 lemon or orange
 (for juice)
dash balsamic vinegar
sea salt
freshly ground pepper

4 medium carrots peeled and grated
firm tofu or cooked chicken, diced

Toasted seeds -- sunflower, sesame, flax, or a mix

Directions:
Directions:
1. Mezcle el aguacate, jugo de limón y vinagre balsámico en un bol mediano, y machuque el aguacate con un tenedor. Agregar sal, pimienta.
2. Añadir las zanahorias y el tofu/pollo cocido, y revuelva hasta que estén bien combinados.
3. Cubrir y refrigerar por media hora o hasta 1 día. Mezcle una vez más antes de servir, ajustar la sazón y agregar las semillas tostadas.

1. Combine the avocado, lemon juice, and balsamic vinegar in a medium salad bowl, and mash the avocado roughly with a fork. Sprinkle with salt, pepper.
2. Add the carrots and tofu, and stir until well combined.
3. Cover and refrigerate for half an hour or up to a day. Toss again before serving, adjust the seasoning, and sprinkle with the toasted seeds.
