2 lbs. shelled shrimp
1 cup sliced onion
1/2 tsp ground turmeric
1/2 tsp. chile powder
1/4 cup cooking oil
2 tbsp. chopped coriander leaves
salt to taste (if desired)

Directions:
Directions:
Rub a pinch of turmeric and a pinch of salt on the shrimp. Heat the oil. Fry the shrimp for 2 minutes. Remove shrimp from the pan. Saute onions in the remaining oil very lightly. Mix turmeric and red chile in 1/2 cup of water, stir and fry till oil separates from the spices. Add shrimp and additional 1/2 cup of water, salt if necessary. Cook for 3-5 minutes. Add coriander leaves (if you like). Remove from heat.
