1 1/2lb ground beef
1 Medium Onion Chopped
1 Medium Green Pepper Chopped
1 Garlic Clove Minced
16oz Can Drained Pinto Beans
15oz Can Tomato Sauce
16ox Jar Picante Sauce
1TB Cumin
1/2tsp Salt
12 Corn Tortillas
2C Shredded Cheddar Cheese
Shredded Lettuce, Tomatoes and Sour Cream for topping
Directions:
Directions:
Brown meat, green pepper, onion. Drain fat, add beans, tomato sauce, picante sauce, cumin, salt and simmer 15minutes. Spoon small amount into greased 9X13 pan to cover bottom. Cover with 6 tortillas overlapping to cover meat. Top with ½ meat mixture and sprinkle with cheese. Put on remaining tortillas overlapping and top with meat. Cover tightly with foil. Bake 350 20minutes. Remove foil, cover with remaining cheese and bake 5minutes. Let stand 5minutes. Have taco fixins to top off servings. Sour cream, tomatoes, lettuce etc.
