1 8 oz. can tomato sauce
1 can Rotel© tomatoes
1 can diced tomatoes
1 can French Onion soup
1 can condensed beef broth
1 small can mushrooms, drained
1 onion, chopped
2 ribs celery, chopped
1 stick butter, melted
1/2 tsp. cayenne pepper
1/2 tsp. garlic powder
3-4 drops hot sauce (adjust to taste)
1 lb. smoked sausage, cut into pieces
1 1/2 lbs. boneless skinless chicken breast, cut into pieces
2 cups Uncle Ben's© converted rice

Preheat oven to 350º. In a large roasting pan, combine everything except for sausage, chicken, and rice. Mix thoroughly and then add sausage, chicken, and rice. Stir to combine all ingredients. Cover tightly with lid or aluminum foil and bake for 45 minutes to 1 hour until the chicken is done and the rice is tender.

Works best using converted rice. If you use regular rice you will have to bake it longer or the rice will be crunchy. Use a LARGE roasting pan. A 9 x 13 pan is too small. This is very easy to personalize to your own taste by adding extra tomatoes, onions, sausage, shrimp, or anything else you have on hand.
