2 Tbsp olive oil
2 Tbsp butter
3 lbs summer squash, cut in 1 inch cubes
2 cups onions chopped in 1 inch dice
1 cup chicken stock
Parmesan cheese (optional)
salt and pepper to taste

Directions:
Directions:
Heat the butter and oil In a large skillet over medium-high heat.

Saute the onions and squash until starting to brown, stirring frequently.

Add the chicken stock. Cover and reduce heat to medium-low and simmer until squash begins to soften (do not overcook).

Uncover and increase heat allowing excess liquid to evaporate (you will want a little to remain).

Stir in Parmesan, if desired.
