3 to 4 tablespoons butter
1 cup flour, unsifted
1/4 teaspoon salt
1 cup non-fat milk
3 eggs
1/2 cup grated Cheddar cheese

Directions:
Directions:
Preheat oven to 375 degrees.
Place 1 to 1 1/2 teaspoons of the butter in the bottom of each of six to eight custard cups. In medium bowl, mix flour and salt; slowly blend in non-fat milk; beat in eggs until well blended; fold in cheese. Place the cups on a cookie sheet and place in the preheated oven for 3-5 minutes (until butter melts). Remove the sheet and cups from the oven and fill each cup 1/2 to 2/3 full with the mixture.
Bake 45-50 minutes.

Do not peek while cooking the first 30 minutes. If you like them dryer in the middle, allow them to sit in the oven after baking for 10 minutes with the oven turned off. This is close to a perfect popover. Get 'em while they're hot!
