1 lb. unsalted butter (softened)
1 cup light brown sugar
5 cups flour (1 cup at a time)
1 tsp. salt

Batch #1 1 tsp. candied ginger/chopped
1 tsp. ground ginger
1 tsp. white pepper

Batch #2 4 oz. mini chocolate chips
1 Tbsp. Kahlua

Batch #3 1 heaping Tbsp. dried orange rind
zest of 1 orange
1 Tbsp. Gran Marnier

With mixer, cream together butter and sugar. Mix together flour and salt then add slowly, one cup at a time, to creamed mixture. Dough will be stiff. Divide dough into thirds and place in separate bowls. (For 3 batches)
Improvise with flavors. Martha’s suggestions are

Stir selected ingredients into a batch at a time.
Place each in a cake pan, flatten with palm of hand. Score as desired, prick with fork.
Bake 45-50 minutes at 275 degrees (edges should be slightly browned).
Will keep for several days in airtight container.
