1c butter or Marg.
3-1/2c flour *
2c sugar
2 tsp. baking powder
1 tsp. vanilla extract
1/2 tsp. salt
1c mashed bananas

Directions:
Directions:
Bake at 375º
for 10-12 mins.
Cream together butter, sugar, and vanilla.
Add bananas and beat until well mixed.
Sift together flour, baking powder and salt. Add a little of the banana mixture at a time, beating well after each additional. Dough will be sticky.
Divide into 4 parts; put part on each of 4 cookie sheets covered with wax paper.
Dampen your hands so dough will not stick and shape dough into long rolls 1 inch in diameter.
Wrap the rolls with waxed paper and refrigerate or freeze until firm enough to slice easily (over night is best).
cut into 1/2 inch thick slices using a serrated knife.
Place2 inches apart greased cookie sheet.

Well cookies are still warm you can sprinkle with brown sugar or cinnamon o r with cookies are cooled may be dipped in melted chocolate.

* You may use 1/2 white flour and 1/2 whole wheat flour, I also put 2 Tbsp. of ground flaxseed for nutty flavor
