1lb Black Turtlebeans
1QT Water
1/2lb Thick Sliced Bacon
1 1/2C each finely Chopped Onion Celery, Carrots
2Ham Hocks
1Bay Leaf
1/4tsp Cayenne Pepper
3TB Cumin
1/2TB Dried Oregano
10C Chicken Broth
1TB Minced Garlic
1tsp Dried Thyme
4TB Fresh Lime Juic
Sour Cream for topping, salt/pepper to taste

Directions:
Directions:
Soak beans in water overnight. Drain beans and sauté bacon until crisp. Add vegetables, onion, celery, carrot, garlic and sauté 5minutes. Add bay leaf, thyme, 1TB cumin, oregano, pepper for 5minutes. Add chicken broth and ham hocks. Bring to boil uncovered and let simmer 2 or2 1/2hrs until beans are soft. Remove ham hocks and remove fat/meat. Add cut up ham from hock back to soup. Add cayenne pepper, cumin and lime juice. Serve warm with a dollop of sour cream and corn bread.
