3 large tomatoes, cut in 1/2 inch slices
2 avocados, sliced in 1/2 inch slices
2 Tbsp mayonnaise, more if desired
6 oz (1 1/2 cups) grated cheddar cheese
salt and pepper to taste

Directions:
Directions:
Preheat oven to 375º.
Coat a 9 x 11 inch baking dish with cooking spray.

Place tomatoes in a single layer in the prepared pan. Season with salt and pepper.

Spread mayonnaise over the tomato layer.

Follow with a layer of sliced avocado, season with salt and pepper.

Top with the grated Cheddar and bake until cheese is melted and casserole is heated through, 15 to 20 minutes.
