1 c. shortening
1 c. packed brown sugar
1 c. white sugar
1 tsp. vanilla extract
2 well-beaten eggs
1 1/2 c. sifted flour
1 tsp. baking soda
1 tsp. salt
1 c. flaked coconut
1 c. Quick oats

Directions:
Directions:
Cream shortening and both sugars until smooth. Add eggs and vanilla. Sift flour, baking soda and salt. Add to mixture. Add coconut and oats to make a medium consistency.

Drop onto cookie sheet by tablespoons. Bake at 350º until done, approximately 12-15 minutes.
