Crust:
1 ˝ Cups crushed Graham Crackers (1 package of 9 double crackers) - Honey Maid
1/2 Cup Dark Brown Sugar - C & H dark brown cane sugar
6 Tablespoons butter, unsalted - organic

Filling:
2 Cans (14oz/can… 28oz total) Sweetened Condensed Milk - Borden
3 Egg yolks – “Large” egg size, organic
1 Cup + 2 Tbs (275 ml) key lime juice – Nellie & Joe’s, or 1 & 1/3# bag of key limes…

Directions:
1. For crust, mix graham crackers and brown sugar together in mixing bowl.

2. Slowly stir in melted butter until completely mixed. Press crust into 9” glass pie plate. Bake crust in oven for 3 min. at 350 F.

3. For filling; mix condensed milk, egg yolks, and lime juice together (they will thicken when mixed) and pour into the crust shell after less than 1 minute mixing.

4. Bake for 15 minutes at 350F on center rack (no pre-bake for pie crust). Let pie cool for an hour, then freeze for at least 3 hours before serving (pie does not crystallize but becomes very thick when frozen).




Notes: For best key lime pie texture, serve a frozen pie that has thawed for only 5 minutes. Fresh whipped cream topping is great on top, and a garnish of lime slices can also be added.
