6 oz baby spinach
15 oz can Great Northern beans, drained and rinsed
4 oz crumbled feta cheese
1/4 cup dried tomatoes (if you use oil packed, pat as much oil off as possible)
2 green onions chopped
1 tsp Lemon zest
2 Tbsp. lemon juice
2 Tbsp. Extra Virgin Olive Oil
1 Tbsp. Fresh oregano
1 Tbsp. Fresh thyme or lemon thyme
1/2 tsp salt
1/2 tsp black pepper or red pepper flakes
12 oz farfalle pasta
Shaved parmesan cheese

Directions:
In a large bowl, combine all ingredients EXCEPT pasta and parmesan . Cover and let stand at room temperature for 2 hours. Shortly before serving, cook pasta according to directions. Drain pasta reserving 1/4 cup of cooking water. Toss cooked pasta and pasta water with spinach salad mixture. Garnish with shaved parmesan. Serve warm or at room temperature . Makes 6 servings.
