2 c. water
3/4 c. sugar
2 tsp. cream of tartar
30 Ritz Crackers
1 unbaked 9" pie shell
1 Tbsp. lemon juice
1 tsp. cinnamon

Topping:
1 c. finely crushed Ritz crumbs, about 25 whole crackers
1/2 c. lightly packed brown sugar
1/2 tsp. cinnamon
1/3 c. melted butter or margarine

Directions:
Directions:
Combine water, sugar and cream of tartar; bring to a boil. Drop in whole crackers and simmer 5 min. Pour mixture into pie shell; sprinkle with lemon juice and cinnamon. Combine all ingredients for topping and sprinkle over pie.
Bake at 400ºF for 15 min., then reduce heat to 350ºF and continue baking 15 to 20 minutes longer. Serve warm.

I found this recipe in a magazine. This mock pie really tastes like an apple pie without the apples. Joe and I find that the longer it sits, the better it tastes.
