Ingredients:
Ingredients:
Chill the salad ingredients before preparing.
5 C cooked wild rice chilled (1 1/2C uncooked)
20oz can pineapple chunks
2 C red grapes halved
1 large can jumbo mandarin oranges
1 C celery chopped
1/4-1/2 C green onions

1 C Salted Cashews

Dressing
1/2C miracle whip
1/3C mango chutney
I like to add about 1 1/2C of either fresh mango salsa (from Good Earth) or mango/peach salsa from a jar.

Directions:
Directions:
When time to serve, toss together salad ingredients and add cashews and dressing and serve in salad bowl lined with greens.
1/c salted cashews

To Make A Day Ahead:
Cook rice and cool. Combine salad ingredients except cashews. I store everything in a baggie overnight so I can toss it together in the morning/ I also make the dressing and mix together and store in an airtight container to throw together in the morning. This gives everything a chance to get nice and cold because this salad is best cold! When ready to serve add dressing and cashews. Serve immediately in a salad bowl lined with greens. I really play around with this recipe and add more of the things I like and less of the others that I am not as fond of. It's very versatile. Enjoy!
